Spring Nourish Bowls You’ll Eat Over and Over Again

Spring is the perfect time for a refresh, starting with your eating habits. If you’re feeling a bit sluggish after hibernating in winter, embracing fresh seasonal produce (even better if it’s grown locally) could put the pep back in your step. One of the easiest ways to do this is with a healthy nourish bowl, so we’ve put together three delicious recipe ideas that will, ahem, bowl you over.
Move over, taco Tuesday, this nourish bowl is reinventing Mexican food as we know it. Start with a base of cooked rice (even better if it’s brown rice). Add your pre-made vegetarian chilli con ‘carne’ (made with red kidney beans, onion, canned tomatoes, smoked paprika, ground cumin and ground coriander, or however you please). Then top with whatever takes your fancy, being guided by what’s in season – guacamole, grilled corn or fresh coriander. Think of it as a healthier take on your go-to burrito.
This nourish bowl has a distinct Middle Eastern twist and includes all the best bits of a mezze plate. Opt for wholemeal couscous or quinoa as the base. Add eggplant, pumpkin and zucchini that have been roasted in oil and your favourite spices (such as garlic, paprika, cumin or harissa), as well as canned chickpeas. Finish with hummus, fetta, Greek-style yoghurt… whatever gets your tastebuds dancing. And, if they’re in season, fresh figs will add an indulgent touch.
Taste of Asia
A light-yet-comforting recipe, this bowl is perfect for fans of Asian food. Combine your choice of noodles (we like soba) with firm tofu that’s been tossed in sesame seeds, Add in a mix of blanched green vegetables (try beans, bok choy or broccolini) and plenty of fresh herbs, such as coriander or Thai basil. Then finish with spring onions, sliced chilli and your favourite sauce (soy, oyster or even a tahini dressing made from tahini, lemon juice and garlic).
Tools of the trade
A few clever pieces of equipment will make sure your nourish bowls are as convenient as you need them to be for midweek meals (and avoid you ordering takeaway). Stock your kitchen drawers with quality knives, a mandolin for easy chopping and scissors for cutting herbs. Chopsticks are great for eating Asian recipes, and don’t forget a beautiful bowl so your creation looks as good as it tastes.
